Ingredients

  • 1 kg Falah Al Dar Chicken Drumsticks
  • 2 cups basmati rice, soaked for 30 minutes
  • 2 medium onions, finely sliced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tomatoes, grated or finely chopped
  • 2 tbsp Kabsa spice mix
  • 1 stick cinnamon
  • 3 cardamom pods
  • 1 dried lime (loomi), optional
  • Salt to taste
  • 3 tbsp vegetable oil
  • 2 tbsp raisins and toasted almonds for garnish

Method

  1. Heat oil in a deep pot. Add Falah Al Dar chicken drumsticks and brown evenly on all sides until golden.
  2. Add onions and garlic; sauté until soft and fragrant. Stir in tomato paste and chopped tomatoes.
  3. Add Kabsa spice mix, cinnamon, cardamom, dried lime, and salt. Cook for a few minutes until the spices release their aroma.
  4. Pour enough water to cover the chicken. Bring to a boil, then reduce heat and simmer until the chicken is tender (about 30 minutes).
  5. Remove chicken pieces and set aside. Strain the broth if needed, then add soaked rice to it. Adjust salt.
  6. Cook rice on low heat until fluffy and fully cooked. Return the chicken on top and cover for 10 minutes to let flavors blend.
  7. Garnish with raisins and toasted almonds. Serve hot with salad or yogurt.
