Classic Chicken Kabsa
A traditional Saudi Arabian favorite made simpler and richer with premium Falah Al Dar Chicken Drumsticks. This fragrant one-pot rice and chicken dish combines aromatic Kabsa spices, tender meat, and a touch of tomato for a warm, comforting, and perfectly balanced meal ideal for family gatherings or special dinners.
Ingredients
- 1 kg Falah Al Dar Chicken Drumsticks
- 2 cups basmati rice, soaked for 30 minutes
- 2 medium onions, finely sliced
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 2 tomatoes, grated or finely chopped
- 2 tbsp Kabsa spice mix
- 1 stick cinnamon
- 3 cardamom pods
- 1 dried lime (loomi), optional
- Salt to taste
- 3 tbsp vegetable oil
- 2 tbsp raisins and toasted almonds for garnish
Method
- Heat oil in a deep pot. Add Falah Al Dar chicken drumsticks and brown evenly on all sides until golden.
- Add onions and garlic; sauté until soft and fragrant. Stir in tomato paste and chopped tomatoes.
- Add Kabsa spice mix, cinnamon, cardamom, dried lime, and salt. Cook for a few minutes until the spices release their aroma.
- Pour enough water to cover the chicken. Bring to a boil, then reduce heat and simmer until the chicken is tender (about 30 minutes).
- Remove chicken pieces and set aside. Strain the broth if needed, then add soaked rice to it. Adjust salt.
- Cook rice on low heat until fluffy and fully cooked. Return the chicken on top and cover for 10 minutes to let flavors blend.
- Garnish with raisins and toasted almonds. Serve hot with salad or yogurt.
